

The commemorative stamp on the theme of "World Environment Day" (Advanced Recycling), included in the "2021 Stamp Issuance Program" prepared by the Stamp Planning Branch Directorate of the Stamp Directorate and put into circulation on June 5, 2021, was designed using the artwork of our Graphic Design Department students during the preparation process. TURKEY'S FIRST FOOD CULTURE SENSORY MAP IS READY...
The sensory map of Istanbul's food culture from past to present was designed and implemented as part of a graduation project by students in the Department of Gastronomy and Culinary Arts, led by Prof. Dr. Sibel Özilgen and Dr. Funda Yıldırım.
A wide range of sources, from newspaper advertisements to films, folk songs, postcards, novels, and maps, were thoroughly researched by 13 students over several months. Hundreds of data points were collected and each was analyzed from both a cultural and sensory perspective (taste, smell, texture, sight, and sound). Countless data points, too many for even us to count, were individually incorporated into the sensory map we created for Istanbul. We consumers define flavor with our five senses. Our experiences and cultural experiences, carried from the past to the present, tell us the taste and story of food even before we taste it, just by looking, smelling, or touching it. An ambient sound we hear, a song, the crowd around us, or perhaps an outfit we see can bring back memories of food/place experiences from long ago or the recent past. With this project, we collected data on our food culture from various sources, compiled it, and recorded it. We also created Turkey's first sensory route map of food culture for our city, Istanbul, which we believe is very important for gastronomic tourism. We wanted to taste and share Istanbul using our cognitive skills. Our map is interactive; simply click on the points that interest you and feel their essence with your senses.
