Patent
The patent of the gluten-free tarhana formulation and its production technique (2015). Tarhana, a traditional Turkish food, is a dried curd traditionally made of flour, yeast, dairy products, dried vegetables, and herbs and spices. Professional Activities, Projects, and Honors
● Team leader of the project to analyze and modify visual-sensory attributes of foods in printed and online menus to shift consumer preferences from meat-based choices to plant-based choices for a sustainable environment, in collaboration with the Ministry of Agriculture and Forestry, 2022-. This project focuses primarily on the development of new food products and/or modifying existing ones by considering both the chemical and physical properties of foods. In this study, the stimuli were the visuals of the dishes, which consisted of food products with varying textures ranging from simple to complex. The project team includes fourteen students majoring in Gastronomy and Culinary Arts and a researcher from the cognitive science department at Yeditepe University.
● Researcher in a multi-country research to evaluate consumers’ attitudes and practices regarding the safety of ready-to-eat foods. The project is led by the University of Belgrade, and includes researchers from nine different countries, 2021-
● Team leader in the creation of a sensory map of Istanbul's Turkish culinary culture from the past to the present, 2020-. The project team includes eighteen students majoring in Gastronomy and Culinary Arts and a researcher from the cognitive science department at Yeditepe University.
● Team leader in the project to analyze the effect of multi-sensory stimuli on consumer' food perception and menu development, 2020-. ● Developed and registered the Gastroartology® program (nationally and internationally) in 2019. This unique concentration program combines the fundamentals of arts and culinary science for students interested in utilizing the visual-sensory properties of foods in areas such as marketing, new product development, menu engineering, and food styling in their future professional-life.
● Coordinator of the project in the field of Gastronomy as a partner in the project titled “Cultural integration of the 22 nations in Maltepe through Music, Dance, Literature, and Gastronomy Oriented Activities”. The project was developed and coordinated by Maltepe District Governorship, supported by United Nations High Commissioner for Refugees (UNHCR), in partnership with Maltepe University, Yeditepe University, Maltepe District Directorate of National Education, and Artists and Art Lovers Foundation, 2019.
● Designed the culinary education facilities and the curriculum for one of the major Municipalities in Turkey, 2018.
● Initiated and led the study titled “Analysis of nutritional properties of traditional foods selected from popular cookbooks between 1950 and 2019” under the International Network of the UNESCO/UNITWIN Chair, “Food, Culture, and Development,” held by Universitat Oberta de Catalunya, Spain, 2017.

● Consultant for a private company in the development of heat-resistant, edible cups, 2013.
● Designed a small-scale smoke oven for poultry and fish products as a consultant for Arçelik A.Ş., one of the biggest industrial companies in Turkey, 2010 – 2011.
● Researcher in BaseFood, (sustainable exploitation of bioactive components from the Black Sea Area traditional foods). The project was supported by the EU, Seventh Framework Programme (FP7), 2009 – 2012.
● Project leader in the development of Failure Mode and Effect Analysis (FMEA) food safety program for the process of industrial tarhana (traditional Turkish food) production, funded by the Scientific and Technological Research Council of Turkey KAMAG TARAL-1007 Research Programme, 2009-2010.
● Researcher in the project “Eating habits of older-aged people living in elder care in Turkey,’funded by Metropolitan Municipality of Istanbul, 2006 – 2007.
