Under the agreement signed in 2016 by the Department of Gastronomy and Culinary Arts of Yeditepe University Faculty of Fine Arts and UNESCO / UNITWIN "Food, Culture and Development", represented by Universitat Oberta de Catalunya (UOC) and our ongoing efforts to record Turkish Culinary Culture. The author of the books “Büyükada Yemekleri” and “İstanbul Sofraları”’ Selin Kutucular recently contributed together with her dear mother Zübeyde, shared her recipes with us from her grandfather and from her childhood. Our students these wonderful meals for future generations. We would like to thank Selin Kutucular and Zübeyde Hanım for their contributions.
